A special one to mark my 100th all-grain brew. Aimed at 10% and 100IBU – or thereabouts. Mainly hopped with Centennial (as seems appropriate!) with dashes of Magnum, Simcoe, Amarillo and Chinook for good measure. And I’ll decide on the dry-hops when I get there.

Comments:
Hardness 205ppm again, so in 31 litres of liquor we have 31ml CRS, 8.6g gypsum, 2.5g calcium chloride, 3g epsom, 0.8g salt.
2017-02-27: I gave it a week at 19C then a week at 21C, and it’s finished at 1.009 and tasting great. Dropped in dry-hops of 50g Centennial and 10g Nelson Sauvin, and plan to crash-cool on Friday in preparation for bottling.
