4AM Sinner (AG#86)

Not much of a veiled reference in the title for this one… Based on the recipe that the BrewDogs published last month, but then entirely buggered around with as I had very few of the ingredients needed!  The grain bill was ok in terms of pale and Munich malts, but I only had standard Crystal malts, so I ended up using the mix of things shown in the recipe below.  I also have substituted almost all the hops; the dry-hops listed below came from the recipe, but I’ll switch almost all of them when we get to that stage.  Yeast will be Nottingham, as it’s a choice of that or Windsor.

Comments:

Slightly low again on hardness, at 216ppm.  CRS was 31ml for 3o litres, along with 8.9g gypsum, 2.3g CaCl2, 3g Epsom salts, and 0.8g salt.

27 litres at the start of the boil, 22 litres at the end, at 1.047. Slightly lower than aimed for, but 2 litres longer, so still 75% efficiency.
